Job Purpose

Food and beverage stock control in all stores. Analyse food cost, wastage, self-consumption. Calculate Ideal vs Actual. Keeping track on menu mix. Also ensuring plants basic hygiene

Job Description

•   Calculation of Food Cost & Wastage
•   Calculation of Ideal food cost and comparison with actual food cost.
•   Analysis of menu mix- finding the top and bottom performing stores.
•   Menu rationalization
•   Working with NPD & Supply chain team on food cost reduction
•   Reviewing purchase price inflation index
•   Food cost analysis- reason for variance vs budget and last month
•   Menu Mix sales analysis
•   Preparing food cost budget of the reason
•   Assisting business team on sales mix, food cost and any such insight.
•   Reviewing the PID of Base kitchen and Stores, sharing observations if any.
•   Auditing the Basekitchen controls on all processes.

Candidate Requirements:

Qualification

•   Bachelor's and master's degree in finance, Business, Accounting, Commerce or a related field.
• 5+ years of experience in working in FNB or costing function preferably in the QSR,

FMCG industry.

Functional Skills

•   Clear understanding of QSR/FGCG Business
•   In depth and practical knowledge of providing food cost analysis & menu mix
•   Decent knowledge of manufacturing setup
•   Working knowledge of D365 (Dynamics) and SAP is a plus

•   Proven team management and leadership skills
•   Excellent communication skills - written and verbal.
•   Comfortable working in a high-pressure environment and managing competing deadlines.
•   Strong analytical and problem-solving skills
